巧克力古早味蛋糕捲
份量 : 約8人份
材料 :
A.可可鮮奶油
動物性鮮奶油300g
細砂糖25g
蘭姆酒1茶匙
無糖純可可粉30g
B.巧克力古早味平板蛋糕
(35cmX24cm)
a.蛋黃麵糊部份:
蛋黃5個
細砂糖25g
液體植物油60g
牛奶60g
低筋麵粉75g
無糖純可可粉20g
苦甜巧克力磚30g
b.蛋白霜部份:
蛋白5個
檸檬汁1茶匙(5cc)
細砂糖60g
*預熱至170度c的烤箱中約烘烤30分鐘

300g whipping cream
25g caster sugar
1t rum
30g unsweetened cocoa powder
B. chocolate Cake
(35cmX24cm)
a.chocolate Batter
5 egg yolks
25g caster sugar
60g vegetable oil
60g milk
75g cake flour
20g unsweetened cocoa powder
30g dark chocolate (60%)
b.Meringue:
5 egg whites
1 teaspoon (5ml) lemon juice
60g caster sugar
Preheat the oven to 170°C (338°F) 30min
